Deb, you might want to try searching the NO-MILK archives for recipes
that sound interesting to you.  Actually, I have a few cheese recipes
from the archives that I will send you off list.

There is also a book called "The Uncheese Cookbook".  IIRC, the author's
last name is Sepaniak.  This book has recipes for non-dairy versions of
just about every cheesy thing you can think of.  Most are soy-free, but
she does use nutritional yeast frequently.  Is that okay for you?
