Hi Lila,
I make mashed potatoes with chicken broth (the Swanson can kind).
Sometimes I also add crushed garlic for varity. Onions, bacon, ham,
garlic, spices, all can add flavor if you like them. Chicken broth (if
you can have it, makes a nice lite mashed potatoe dish. I've also
whipped potatoes with the juice from green beans. I cook the beans then
drain most the juice from the beans to mash or whipped the potatoes
with! Any liquid you enjoy can be used, like the juice from a roast
after cooked.
I've always enjoyed dreaming up ways to cook things, and it's sure
helping with the no-dairy or eggs restrictions.
