All,

I just found a cool recipe. You mix a bunch of dry ingredients
together and store for a year. When a recipe calls for a 10 3/4
ounce can of cream of (mushroom, celery, chicken) soup, add
1/3 cup of the mix with 1 1/2 cups water and microwave for 2 to
2 1/2 minutes. Use in place of the condensed can of soup (undiluted).
The original recipe calls for instant nonfat dry milk powder, so
substitute in your favorite soy powder or rice powder milk
substitute. I have not personally tried this, but I don't see
why it wouldn't work! Finally, casseroles for my son!!!!

2 cups soy/rice drink powder
1/2 cup plus 2 Tbl cornstarch
1/2 cup mashed potato flakes
1/4 cup chicken bouillon granules
2 Tbl dried vegetable flakes
1 tea onion powder
1/2 tea dried marjoram
1/4 tea garlic powder
1/8 tea white pepper

In a food processor or blender, combine all ingredients; cover and
process until vegetable flakes are finely chopped. Store in an
airtight container in a cool dry place for up to 1 year.

Thanks to Taste of Home's Quick Cooking Magazine!

Note: amount of soy/rice drink powder should be varied to suit
individual tastes.
