This is not my understanding of the (theorized) link between dairy
consumption and diabetes. As I understand it, the consensus is that proteins
found in milk resemble those on the surface of islet cells, and the body in
mounting an immune attack on the cow's milk proteins inadvertantly destroys
its own cells, thus causing diabetes.

I have two brothers with juvenile diabetes so have paid a fair amount of
attention to this research, but I believe there's a fuller (and better)
explanation than mine on the NO MILK web site.
