        Yes, there are simple ways of finding out such information.  One of
the easiest is to contact your local University...they most likely have a
Dept. of Food Science and/or a Nutritional Sciences Dept. on campus.  Most
Universities in the U.S. also have an Extension Education program or an
outreach education program.  The outreach/extension staff are THERE to
answer questions from consumers, general public and industry professionals.
Many places were out reach educators are not available also have staff who
are dedicated to teaching...they love questions from people truly trying to
understand new information.  Of course, I work for my local university's
Dept. of Food Science--so I perhaps may have an admittedly biased opinion on
this matter! :-)
        As Joe suggested earlier in today's postings there are also
professional Food Science organizations who are willing to educate the
public.  The internet and/or a good library can work too...but who has time
for that!  A phone call is quicker. :-)
