Hi, Laurie, regarding biscuits like lumps of cement:  Try substituting
barley flour for some of the regular flour.  It lightens the product.

I sometimes used powdered egg whites beaten well.  They are pasteurized
in the process, I believe, but don't know much about hem.  I don't use
yolks due to cholesterol.
