Strawberry Tofu Ice Cream
2 lbs. soft tofu (I used silken)
1 cup soy milk
2 cups sugar
1 1/3 cups oil
1/4 cups fresh lemon juice
2 (20 oz.) pkgs. frozen unsweetened strawberries
2 Tbs. vanilla
1/4 tsp. salt
Blend the ingredients until smooth and creamy. Freeze in a home
hand-operated or electric ice cream maker and serve.
