Ken,

I think that the "Lactic Acid Starter" is a bacterial innoculate i.e. a
lactic acid producing bacteria used in the processing of sausage.  As such
it is not a dairy product/by-product.

Sausages can have dairy products in them.  Usually it's in the form of skim
milk, easily seen on the label.
