I read an interesting book last night about "carbohydrate addiction."
The authors hypothesize that some people are addicted to carbos.
The basic problem is with insulin regulation which leads to
craving carbos which only sets up a vicious cycle of further
hyperinsulinemia and eating more carbos and gaining weight.
The diet they recommend is to eat virtually no carbos for
breakfast and lunch and then have a "reward meal" that includes
all the carbos you want. The trick is that the reward meal must
be eaten within one sixty second window.
The book does not specifically mention celiac disease. However many
people have mentioned craving carbohydrates. I wonder if this is
the mechanism at work in those celiacs who **gained weight** before
their diagnosis.
Has anyone done this diet?
