I would think that eating GF in restaurants in China  would be quite
difficult.  If you had a "dining card" written in Chinese and a bottle of GF
soy sauce and asked that woks be cleaned well before using, you could
probably live on a diet of rice with stir fried vegetables, meat, bean curd,
and fish.  While wheat-containing soy sauce is ubiquitous in China, the
cuisine of northern China is wheat-based.
