Earlier this week, I experimented with quinoa pasta, labelled "gluten-free"
all over the package. I get "sub-clinical" reactions, primarily arthritic
pain and stiffness, and fatigue.
I spent most of the next day in bed, achy, and unable to lift my boys for
extended periods of time.
I know this is just anectdotal (sp?) "evidence" at best, but perhaps it
will help some. I am too new at this to know if people suffer degrees of
sensitivity to gluten, but I seem to react really quickly and severely to
the most minute exposure. Maybe quinoa just bothers people who are
super-sensitive, like me?!?
