I was under the impression that because gluten is insoluble in water, it is
pretty difficult to digest for a significant number of persons. And our
digestive systems have not evolved as quickly as cereal domestication.
We started out as hunter/gatherers. Dr. Lutz' article provided by Don Wiss
suggests this explanation.
Are there any other foodstuffs available that aren't soluble in water
besides perhaps Olestra? and pesticides?
I want to thank you all very much again for everything. Our lives are much
richer since discovering this list.
I forgot to mention that my chocolate chip recipe is found in Ted Hodge's
Archives: 2nd quarter 1996. Another excellent recipe in the Recipe Archives
is Fig Newtons. (I leave out the orange juice)
