Just a word of caution for folks on this list who have
intolerances or allergies to foods other than gluten:
According to some information I found on the Web,
lecithin can be derived from liver, oatmeal, soybeans,
cauliflower, kale, eggs, and peanuts. Most commonly,
it's derived from soybeans and eggs. If it's from
soybeans, I think that it's identified as "soya lecithin."
Since I'm intolerant to both soy and eggs (as well
as to a long list of other foods besides gluten) I carefully
read package ingredients to avoid lecithin.
