I read Darla's questions about GF condiments with much empathy. I was
diagnosed celiac 3 months ago. What a strange trip it's been (to borrow
from J. Garcia). I'm in the military and was given a small 28 page pamphlet
by the base dietician with which I was to completely change my entire
eating habits forever. The contradictions I come across from source to
source are amazing. I don't really know what I can eat. I go several days
to a week symptom free, then slam! two or three days of misery. I am so
confused, but I press on with trying to understand the workings of a GF
diet. I can only say that generally I am feeling better than I did four
months ago. Now if I could only put some of back on and gain a little
stamina.
