Someone on the list asked about latkes.
Latkes are easy, just use a g-f flour in place of regular flour in any
recipe. I grate 2 or 3 peeled potatoes, traditionally by hand, a few
skinned knuckles are part of the tradition, or try a blender or food
processor. Don't grate too fine. Add 2 eggs, lots of salt and pepper, and
a few tablespoons of flour and a bit of melted butter or oil.
Fry up pancake style in a well oiled frying pan until browned on both sides,
and serve with yogurt, sour cream or applesauce.
The raw potato mixture tends to get brown in contact with air, so store the
extra in the refrigerator with plastic wrap over the open surface.
Or easier yet, try Carmel Brand latke mix found in the Jewish food section
of supermarkets. It's very easy and very good and g-f as well.
