Well, being the cookie lover that I am...I just couldn't go another day
without chocolate chip cookies. So I went out to the celiac web site,
found a GF cookie recipe and baked up a batch. The recipe called for a
mixture of rice/soy flours, but I only had rice flour. I tried making the
cookies anyway. Well they turned out pretty darn well for a first try. :)

They are just a little flat, but hey that I can deal with. The only bad
thing I can see about the whole experience is that I scarfed about 6 of
them in about 1/2 hour. :) YUM!!!...Well at least it was brown rice flour,
probably has a little more fiber than your normal gluten-loaded wheat
stuff. :)
