I don't know about celiac reaction to large doses of ascorbic acid, but one
of the side affects of large doses can be gout. I discovered this about 20
years ago, when I was taking 3-4000 mg a day for a cold. I got gout very
badly in one knee, and the doctors, including a specialist, just said that
I had arthritis and would have to live with it the rest of my life. Then my
wife discovered on a medical bulletin at the health unit where she worked a
list of lesser known side effects of megadoses of vitamin C. Result: gout
cleared up very quickly.
