I posted a note a while back regarding mixers and gluten-free flour. I
received 14 responses indicating the Kitchen Aid stand mixer worked very
well (models listed ranged from K5M90 to Classic to "heavy duty" to 350 watt --
some of these 'types' may reference the same machine). One
person uses a Kitchen Aid hand mixer and has had good results. One
respondent uses a Braun hand-held mixer, and another respondent uses
a british model, Kenwood Major 7 qt (can be seen at http://www.
appliances.com - sold in US under "Rival" name).
One prefers a hand whisk rather than using mixers to make GF bread.
One other note: using the dough hooks first to get flour/liquid blended
may be helpful, as you can then switch to regular beaters if desired.
