Saw your post. Have another suggestion that is dynomite!
When living in Chicago, before moving to FL, there was this French/Viet
restaurant. They served stuffed shrimp as an appetizer. Easy to make.
Done it.
Jumbo shrimp cleaned, tail section left on. Butterfly top. Make a
stuffing of ground cheap shrimp and water chestnuts. A couple whirls in the
food processor should do it. Stuff the shrimp in the split you've made. Big,
about a tablespoon full. Wrap the shrimp in the spring roll rice skins.
Deep fry.
You won't believe how good they are!

I have used the spring roll wraps. They are WONDERFUL!!! They were
the dry, flat, thin ones. I soak them in cold water a little until they are
soft.........................
