One more way to cook rice (works for me!):
Put 1 part rice and 1 2/3 parts water in a pot and cover with a lid.
Bring to a boil. Lower heat so water is just simmering. Cook 20 min. for
white rice; 45 min. for brown rice.
I have an electric stove, so I put a heat diffuser under the pot, and set
the burner to its hottest setting until the water boils. Then I turn it
to its lowest setting and let it sit until done.
What this method has in common with one in another post is that there is
*less* than 2 parts of water for 1 part of rice. If you use 2 parts of
water for 1 part of rice, the rice sticks together (which may be what you
want, if you're eating with chopsticks).
