Imagine it's suppertime in America, and you don't feel like cooking.  For
the wheat-eating crowd, this problem is often solved by a phone call to a
well-known chain of pizza delivery restaurants.  Their radio and television
advertisements (strategically timed to begin appearing at about 5:30 pm)
promise that in 30 minutes or less, a red-white-and-blue motor vehicle will
come careening down your street and a young man/woman will rush to your door
with a steaming hot, partially-baked pizza.  It's not quite so easy in the
gluten-free world, but you can make the following recipe at home in about
half an hour.  In addition to being GF, you'll save about $7.00 and reduce
the risk of traffic accidents!

1 cup          "Instant" Rice (e.g. Minute Rice), straight from the box
1 1/2 cups     Tomato PUREE
1/4 cup        Water
2 teaspoons    Minced fresh garlic
1 teaspoons    Minced fresh basil
1 teaspoons    Minced fresh oregano
1/4 teaspoon   Finely crushed dried rosemary
1 1/2 cups     Shredded mozzarella cheese
          Pizza toppings to personal taste

Preheat oven to 350 degrees Fahrenheit (175 degrees Celsius).  Combine
instant rice, tomato puree, water, garlic, basil and oregano; mix thoroughly
(the rice will begin to absorb the liquid from the tomatoes).  Press into a
pizza pan or two pie plates (it is not necessary to oil the pan/plates).
  Sprinkle cheese over top of rice mixture.  Top with desired pizza toppings
such as GF pepperoni, mushrooms, onions, sun-dried tomatoes, strips of bell
pepper, etc.  Bake 15-20 minutes or until cheese begins to bubble.  Serve.
