Hi all - I'll be traveling in Louisiana in mid February (not New Orleans -
rather the area around Lafayette) and have been told that some folks make
gumbo without roux. If anyone knows any specific places in this area that
might be apropos for a celiac...I'm hoping not to subsist on red beans and
rice (although I've done worse). judy in snowy nyc
