My camping menu book is packed up in the rafters and we're going on vacation
tomorrow. Here's what I can remember off hand:
Snacks/lunches:
- peanut butter with apples, bananas, or celery (for a hike, core the apple
and fill with peanut butter)
- trail mix (mixed nuts, raisins, M&M's)
- rice cakes with cream cheese (Quaker flavored rice cakes are GF EXCEPT the
mini popcorn cheese flavor)
- Nabisco Easy Cheese (in squirt bottle) on corn chips, rice crackers, etc.
- pudding cups
Dinners:
- hot dogs roasted over fire, canned veges cooked in can in the coals
- S&W Honey Mustard Baked Beans with salad, veges, etc.
- S&W Chili Beans with ground beef and canned corn added
- hamburger packets: 1 hamburger patty, potato slices, carrot slices, onion
slice, and 2 strips bacon on top. Wrap each packet in double layer foil
(outer layer use heavy duty foil), and cook on top of coals, turning
occasionally. I think this takes about 1/2 to 3/4 hr. to cook.
- Porcupines: (don't have receipe so I'm winging it here!) Ground beef,
chopped onion, Minute Rice, egg, garlic powder. Mix all together and make
meatballs. Cook in tomato sause in frying pan, covered, until cooked
through. Rice will poke through meatballs and look like porcupine (doesn't
always work, though!)
Dessert:
- whole apple, cored and filled with brown sugar and cinnamon. Wrap in double
foil, cook on coals, turning occasionally. Great on a cold night!
