Dear Dianne in B.C. Canada,
 
I forgot to mention...your idea about cornmeal as a hot
breakfast sounds great, accept that at least in the U.S.
cornmeal has wheat flour in it!  At least the brands I
have looked at do.  What about in Canada.
 
Maybe I have just been looking at the wrong brands.
 
Another problem that is a constant nuisance to Celiacs
is the cross contamination problem.  This is the worst
thing to avoid, because you never know if a product
is contaminated by wheat in the manufacturing process
unless the manufacturer will guarantee it.
 
Typically, manufacturers that make a broad range of products
that include wheat, in the same factory, won't guarantee
gluten free because of all the cross contamination likelihood.
