        In last Sunday's paper was a recipe for raised waffles. It looked
easy and I modified it for gluten free users. They are fantastic!
        1 3/4 cups scalded milk.
        1 tsp. salt
        1 Tbsp. butter
        1 cup brown rice flour
        3/4 cup sweet brown rice flour
        1/4 cup soy flour
        1 tsp. granulated yeast in 1/4 cup of lukewarm water
        1 tsp. sugar in the yeast mixture
        2 egg yolks
        2 egg whites
        Add salt and butter to milk. When lukewarm, add yeast mixture and
mixed flours. Beat well. Let rise all night. Next morning add beaten egg
yolks, fold in stiffly beaten egg whites. Bake at hottest setting on
waffle iron. I baked for four minutes. These are great with breakfast. I
just pop in the toaster.
