White rice is just brown rice with the brown part milled away. This milling
process removes many nutrients which is why we enrich white rice. Brown
rice is not enriched. My understanding is that brown rice is "pure," that
is nothing is added to it.
Brown rice has much more fiber than white rice (which has almost none).
Brown rice has a nutty, chewy taste/texture. I mix half white rice and
half brown rice for breakfast and then add sunflower seeds and chopped
apples. It's tasty and nutritious.
Brown rice doesn't work well in all recipes. It doesn't absorb sauces and
flavors the way white rice does. But if added in recipes for which nuttiness
and chewiness are benefits, it adds a lot to your diet.
