When I started to wane a few weeks ago, it hit me that probably more
protein was needed (same thought as Leslie had). I sent for the bean
flour that's been mentioned so often here- Authentic Foods. The day it
came I made the falafel mix- delicious and light. The next day was Sat.,
so I baked several bean flour recipes and ate or froze them. Everything
was delicious and that jittery depleted feeling was gone. I feel alert
and clear-minded this week at work. I grabbed a few frozen muffins to
bring for lunch today (made with bean as the only flour), one of those
mornings  in a hurry and I'm still okay at this tail-end of the day.
 
Recovering bodies sure need those building-block ingredients!
