My understanding is that many celiacs are not born that way..  In other words,
many celiacs have a period in their life when they can digest glutin with no
untoward effects and then something changes.  Is the acquired inability to
safely metabolise gluten necessarily due to eating glutin or could it be due to
other chemicals, either naturally occuring or man made which eroded the body's
ability to properly digest gluten?
 
Suppose that somewhere on this earth there exists a group of people who have a
wheat or oats based diet but where pesticides and herbicides are never used.
 Does such a place exist and if so, does it have the same percentage of
celiacs?  Is the disease well enough known such that demographic studies have
been done on its distribution?
 
Does the disease exist in other animals?  Can one buy GF dog biscuits?  Do they
taste as nice as Meaty Bites?
 
For those of you who in pre-celiac days regarded bread as a source of nutrition
rather than as something simply to contain sandwich fillings, potentially you
are missing out on B group vitamins.  Almonds and hazelnuts are excellent
sources if these as well as other vitamins.
