I recently flew TWA and Delta on snack flights.
 
Delta gave me a rice cake with a slice of turkey and a slice of cheese,
along with some unflavored organic chips.  Not very exciting or filling,
but it fit the diet.
 
I requested a gf snack when I made the TWA reservation and was told that
they did not offer gf snack flights.  The regular snack contained nothing
I was confident to be gf.  I wrote a letter to the president of TWA after
the flight, stressing that Delta was able to accommodate the gf snack
request, and have not heard a response.
