I've never seen any other vinegar term in ricotta but just "vinegar", all
by itself.
The term " vinegar" by itself in a list of ingredients is supposed to
mean (apple) cider vinegar according to Felicia Satchell of the FDA (talk
at Baltimore meeting, transcript stored in celiac archives, I believe).
It's not a "standard of identity", but it warrants FDA action. If a
company isn't using that then contact the FDA. That's something they can
do something for celiacs.
Recently, some have claimed that this meaning of "vinegar" isn't always
followed. Evidence, please! A specific example in which the company
acknowledged using some other vinegar?
