Well not to sound in any way offensive but i do like to see my self as a
world citizen and do believe that there is only one world that we live in
and obviously any differences that exist if they are on the negative side
have to be overcome. The list and the internet are in my opionoin the right
start. Sorry just had to say that.
Any ways it depends where you live and what souces are availabl;e to you.
There is a company out there that can sell you the ingredients if you can
not get them in your area. As i have a connection with them i can not post
their name on the list,but to give you a tip the first letter of the
company is the german version of the country that is a direct neighbour to
the USA.
 
Here is one possible substitute for chestnut flour in the recipe.
 
Instead of the chestnut flour use:
1/3 cup of defatted soyflour
1/3 cup purred cooked lentils or white peas
1/3 cup extra potatostarch
 
Also start with only one cup of water and add more slowly to get a smooth
batter/dough.
 
In regards to the almond flour. Almond flour is a byproduct of the
proccessing  of almond oil. So you could use  fine ground almonds but than
i suggest to use only 1/8 cup of fat.
