When I was at the celiac convention in Dallas a couple of weekends ago I
heard of Jowar flour for the first time.  Since then, I have used it and
I will never go back to using rice, potato, tapioca, or soy flour
again.  You can substitute 1 cup of Jowar flour for one cup of wheat
flour.  This stuff makes wonderful pancakes, cakes, coating for fried
chicken, you name it and I think it is a little cheaper as well.  If you
have not tried it, I would encourage you to.
