Since going gluten-free I've contacted several manufacturers to ask about
their products. The following two companies which are not listed in the
archives said they would be happy to have the list know that they have
gluten-free products--if anyone has any experience that suggests otherwise,
please let me know!

1) Francis Simun Bakery, 3106 Commerce St., Dallas, Texas 75226 (214)
741-4242. Fax: 214-744-7656. Makes bagels, flatbreads and breads that are
yeast-free. The bagels are expensive but have the look and texture of deli
bagels. Catch is they also make wheat, rye, barley, oat, teff, amaranth,
millet, etc.,  but Francis Simun assured me that they clean the machines
("it's like a hospital here") and they use "a little cup" to dispense the
flour, no uncleanable pipes or other hidden places for trace contamination.
Here's a sample of available flours/prices:
Bagels or Flatbreads ingredients: flour of choice, Rain Fresh filtered
water, and sea salt
  Rice  $1.69
  Sweet potato, tapioca, buckwheat, cotton, corn, soy, garbanzo, or potato $1.99
  Pinto, navy, kidney, blackbean $2.39
  Lotus, malanga, cassava, white sweet potato, yam, water chesnut, or
    arrowroot  $3.29

Loaves ingredients: flour of choice, Rain Fresh filtered water and sea salt
  Rice  $6.89

  Pinto, navy, kidney, black bean $8.50

They will tailor to personal needs and taste.

2) "Organic Original Rice Nectar" from Suzanne's T&A Gourmet, Somerset NJ

Ingredients: Organic rice syrup (partially polished brown rice, koji,
water). Available only in gallon size, 11.5 lbs net.
Suzanne said she uses no barley enzyme. Also has real-fruit rice syrups
(strawberry, blueberry, raspberry). When I asked if I could post this on
various lists, she said any orders that mention the list will receive a
discount at $25.00 per gallon (instead of $30.00) plus S&H
