1) I have found that taking Motrin (ibuprofen) can relieve a lot of the
gastrointestinal symptoms from an inadvertant gluten ingestion.
 
2) According to the medical literature, corticosteroids stop this type
of immune response, so if your physician will prescribe a single dose of
corisone (or prednisone) for this type of reaction, it should help a
lot with the symptoms.  Of course, you should not take steriods for long
periods of time to avoid supression of your own adrenals.
