I recently posted a message saying that soy makes the bread so moist. I had
several people ask soy milk or soy flour, guess I didnt make it clear.
Anyway, what I use is 1/4 cup of soy flour along with rice and tapioca flour
to equal 3 cups. Here is the whole recipe:
2 cups rice flour(some brown if you like)
1 cup tapioca flour
1/4 cup soy flour
3/4 cup glutinous rice flour or potato starch
1 tbsp. xanthan gum
2 1/4 tsp. yeast
1 1/2 tsp. salt
3 eggs
3 tbsp. honey
4 tbsp. canola oil
1 tsp. cider vinegar
1 cup of water(more or less)
Put liquid ingred. in bread maker, add dry ingred. If I see its too stiff
I'll add a little more liquid.
*I cant eat dairy so there is no dairy and my husband cant eat potato so I
usually use rice flour instead of potato flour.
*The crust will not be quite as crispy without dry milk but by all means add
it if you can.
