Re: Karen Bulmer's request for a good GF cookie, the following is a recipe
for Norwegian Almond Cookies (also known as Kransekake - Wedding Cake):
        500 grams almonds, skin on, ground very fine
        350 grams icing sugar (make sure it is not cut with wheat starch!)
        2 - 3 egg whites (depending on size - just enough to make a very firm
                dough)
Mix well. Preheat oven to 325% F. Line cookie sheet with parchment. Moisten
hands with water. Shape dough into walnut size balls. Flatten slightly with
moistened fork. Bake approximately 10 - 12 minutes (they should no longer
look moist on the surface but they will be soft inside, otherwise they would
be amaretti). Remove parchment with cookies attached and place on damped tea
towel. In about 5 minutes the cookies will peel off easily. Place in
airtight container. Keep for a week, easily. Hope you enjoy.
