Hi Lisa,
Some resturants use a hydrolyzed vegetable protein to wash the lettuce with
to keep it crisp.  I always ask if they use the wash before I have the salad
bar.  In the summer or in warmer climates where lettuce is readily available
it is not as likely that it is washed.
