Hi-
All the nutrition guidelines say to eat multiple servings of whole grains every
day. Having cut out gluten foods, I'm concerned that the replacements (tapioca
flour, potato starch, corn flour, rice flour) are not replacing the nutrients in
wheat, rye, etc. Should I be concerned? Are there particular nutrients I'm
missing and somewhere (outside a vitamin pill) I can get them?
