In the back of the book 'AGAINST THE GRAIN'  by Jax Lowell Peters there is a
list of the celiac societies in Europe.  Some  include telephone numbers with
the information and some include fax numbers.  That would be a good place to
start.  There is an address and phone number for the one in Paris.
