Its interesting that your nutrionist diagnosied you with a geographic tongue.  I
have had a geographic tongue my whole life, its a genetically linked trait.  I
don't believe that you can develop this type of tongue....you either have always
had it or you don't have it.  I don't think eating different foods would cause
you to get one.  Having a geographic tongue means that you have 10X the amount
of taste buds than the average person.  The "grand canyon" you described is
actually extra taste buds.  Thus, since we taste things 10X more watch out for
the spicey foods!  I would be curious if there a lot of celiacs with geographic
tongues?
