I used to have mouth sores prior to going completely gluten-free, and they
recur if I accidentally ingest gluten (though not every time).  I never
tended to have more than a couple at a time, even when I was eating a
"regular" full-gluten diet.  One of the earliest things I read about celiac
disease called mouth sores a "common symptom", as they are due to
malabsorption/deficiency of one of the vitamins celiacs tend to have trouble
with.  Perhaps a good gluten-free vitamin might help you, assuming you've
eliminated all possible sources of gluten in your diet?
