John,

Unfortunately, I can't help you with regard to a no-yeast recipe.

We just recently bought a Zojirushi Q15, and have used it both for GF bread
and "regular" bread, too. We've also had less than perfect results with GF
recipes. We've tried a couple of Bette Hagman's recipes. We used the
basic bread setting with both light and regular crust. We called Red Star
to see if they could help us improve our results, and they suggested that,
because GF needs only one kneading, and this machine kneads the dough three
times, that we should push the dough down at every kneading cycle so the
Xanthan Gum mixes in properly. Otherwise, the Xanthan Gum stays at the top
of the loaf, and the bottom of the loaf will not rise properly. I don't
know if this will help you. We haven't tried their advice, yet, but plan
to bake a loaf of bread tomorrow. You might want to give them a call at
1-800-CELIAC. Let the phone ring, as they don't always answer right away.
They are very willing to help. Hope this helps. Let us know what happens.

By the way, have you tried baking GF with yeast, or not? If so, what were
the results?
