Xanthum Gum is a powder milled from the dried cell coat of a microorganism
called Xanthomonas campestris grown under laboratory conditions. It works as
an excellent substitute for the gluten in yeast breads made from flours
other than wheat.
Guar Gum is a powder derived from the seed of the plant Cyamopsis
tetragonolobus. It has a high fiber content and is sometimes used as a
laxative, one should be aware that when used in baking it can cause distress
to some people whose digestive systems are sensitive.

Xanthum Gum can be purchased from Ener-G Foods (800-331-5222 or
206-767-6660) and some of the other GF food vendors. Guar gum is a close
relative to xanthum gum cooking wise.
