It's impossible to tell beforehand how much knowledge, how open
to knowledge and how cooperative any nutritionist is going to be
until you work with him or her.  What harm?  Give her a shot.  Along
with your eating diary, bring something about gluten intolerance so
that she understands the widespread difficulties of maintaining a
gluten free diet.  Other than the basic malabsorption problems
faced by celiacs, she should probably focus on the requirements for
B vitamins in your diet. These are the vitamins that suffer the
most when you remove wheat/oats/barley from the American diet.
Another big problem is getting enough roughage.  If she isn't aware
of these two major problems faced by celiacs, she probably won't
be a very good source of help to you.
 
These are my sentiments.  I am not a medical specialist.  My Ph.D.
is in research and statistics.
