I have just purchased a Hitachi Home Bakery II bread machine after talking
to the people staffing the Hitachi Breadmaker Hotline 1-800-241-6558 ext. 22
and being reassured that ALL their bread machines will make gluten free
breads (they even gave me the number of Ener-G Foods to get mixes).
 
I have never baked bread from scratch in my life so I think I would like to
start out with a mix.  Do any of you know which prepackaged gluten free
bread mixes work well with a machine, taste closest to wheat bread (white),
and you would recommend to a novice?  I would be happy to post the results
of which seem to be the most popular mixes, if there is any interest.
