We bake excellent gluten-free bread in a bread maker that has all of the
characteristics described below.  It uses "xanthan gum" which should be
readily available in most health food stores.  It is my understanding
that the xanthan gum serves the same purpose as "Clear Gel" so you may
wish to try it.
