I have successfully made gluten free bread with my Hitachi Home Bakery 2
model HB-B102 which I just purchased last week.  Hitachi has a Bread machine
hotline and were very helpful to me regarding gluten free bread receipes
resources.  Give them a call at 1-800-241-6558 ext. 22 and see what they say
about the ability of the Hitachi model you own to make gluten free bread.
