Someone mentioned that they substitute rice paeper for noodles when making
lasagna; I use polenta, which is just corn meal. I buy it in a tube-form,
and use a chees slicer to "peel" off sheets which replace the l. noodles.
It's easy, and polenta tastes amazing. The tubes are available at grocery
stores, as well as health food and gourmet shops. I also mix corn meal and
water to make polenta which I use as a 'crust' for quiche or pizza. It's a
bit easier to work with than GF doughs and rice paper.
