I'm a new, still-trying-to-be-diagnosed celiac, but I do have something to
add! I've been making my own turkey sausage for awhile, so I'll share my
recipe:
 
1 lb ground turkey
3/4 tsp salt
1/2 tsp pepper
1/2 to 1 tsp
dried sage
Mix turkey with salt, pepper and sage. Shape into 6 thin patties.
Fry until browned.
 
These are super-easy, and they can be frozen raw or
cooked. If you have fresh sage, use 10 or 12 leaves, minced. Fresh tastes
better.
