I know that some doctors say that wheat starch is okay, but in Canada wheat
starch is absolutely forbidden.  No grey area here, just not allowed.  If
there is such a thing as gluten-free wheat starch then I've never heard of
it before.  I know that in Canada, Kingsmill makes a gluten-free bread mix
which is okay and a baking mix which is not since it contains wheat starch.
